Cook-along with Nornie Bero – Wattleseed and Chocolate Pavlova with Strawberry Gum Cream

To celebrate the end of NAIDOC Week, we invite you to zoom in from your kitchen to join Melbourne based Torres Strait Islander (Meriam) chef, Nornie Bero for a free cook-along to make a refreshing summer Wattleseed and Chocolate Pavlova with Strawberry Gum Cream.

A twist on the classic Australian dessert, Nornie will lead you in making a delicious full-sized pavlova full of Australian Indigenous flavours: wattleseed, strawberry gum and lemon myrtle.

Sharing her love of Australian Indigenous ingredients, Nornie will show participants how they can incorporate these  flavours into their own home-cooking and share tips on how to get the perfect pavlova crust and soft gooey middle, and how to make a strawberry gum cream with a quick lemon myrtle jam topping.

In this special NAIDOC week program, you can either cook-along with Nornie, or just watch and enjoy Nornie’s demonstration.

To cook-along, you will need:

  • an electric mixer (like a stand mixer or handheld electric mixer to get your egg whites peaky)
  • cross check some basic pantry items (you might need a trip to the supermarket)
  • source some specialty Indigenous ingredients – which will be included in the optional Mabu Mabu Pavlova Kit if you choose to purchase one
  • to read the recipe and have your ingredients on hand

This event is free – but bookings are essential.
